Tips

We like rotini for this recipe because the ridges hold the sauce so nicely.

Adding the pesto is an easier alternative to adding separate ingredients: basil, garlic, salt, and cheese.

If you have two people in the kitchen, one person can work on the sauce, the other can cook the pasta!

For fewer dishes: After you drain your pasta, you can put it back in the pot you just used to cook it. The sauce can be mixed right in the same pot as well.

Ingredients

  • 1 lb of a pasta of your choosing
  • 20 cherry tomatoes (optional)

Sauce Ingredients:

  • 2 tbsp of pesto
  • ½ teaspoon salt
  • ¼ cup grated parmesan
  • ½ teaspoon onion powder

Kitchen Tools Needed: Strainer, cutting board, food processor or small blender, measuring spoons (½ teaspoon and tablespoon), strainer, measuring cup.

Preparation

  1. Put a quart sized pot for boiling water. Add to the water:
    • 2 tbsp of salt
    • We use this water later on to make the sauce, so it helps to season it first!
  2. While your water comes to a boil, add the following into to the blender or food processor:
    • 2 tbsp of pesto
    • 4 avocados
    • ½ a teaspoon of onion powder
    • ¼ cup of grated parmesan cheese (to make dairy free, use vegan parm or nutritional yeast)
    • ½ teaspoon of salt
    • Keep the mix in the blender or food processor, you’ll be adding pasta water in a few steps!
  3. Once the water comes to a boil add:
    • 1 lb of pasta
    • Cook for approximately 8 minutes, or until it is cooked to your liking.
  4. Once your pasta is cooked, strain the pasta. When you’re straining it, make sure to save:
    • 1 cup of pasta water
  5. In the food processor or blender pour in:
    • 2 tbsp of the pasta water
  6. Turn on the food processor or blender and blend until you can’t see any more large chunks of avocado.
  7. Slowly pour in ¼ cup of  pasta water at a time until you get a smooth creamy texture, similar to a pudding texture.
    • We usually use about ¾ of a cup of water.
  8. Pour the strained noodles back into the pot and add avocado sauce. Mix until it’s combined.
  9. Add cherry tomatoes if desired!
